Tom Kha Gai and Sugar

We did not use sugar this time, maybe because the coconut contained some sweetness of its own. Taste test your own Tom Kha Gai soup and if you feel it needs to be a little sweeter, then please feel free to add some.
In many Thai dishes we can simply add from the five fundamental flavors to bring the flavor to the correct balance: sweet (sugar), salty (fish sauce), spicy (chili or pepper), sour (vinegar or lime) or even some bitter ingredients.
